Koude gure wintermaanden doen verlangen naar verbroedering en warme gezelligheid. En vrees niet; dat zit er aan te komen. Over vijftien dagen (vanaf nú) zullen de 2010Winterspelen beginnen, in Vancouver, Canada. (De wekker zetten om 2.00u en dan slaapmoe en dus chagerijnig het fluitketelschuiven kijken, leidt tot verbroe- dering?) Eén van de twee redenen waarom de DB uitdaging van deze maand (uitgedokterd door host Lauren) het maken van een Canadese lekkernij is. Of meer specifiek: de beroemde chocolade- kokosrepen naar eeuwen, nee, vijfendertig jaar oud recept. Toen bedacht door een huisvrouw die meedeed aan een kookwedstrijd. Zij kwam uit Nanaimo en vernoemde haar repen naar de stad.
The January 2010 Daring Bakers' challenge was hosted by Lauren of Celiacteen. And as we're all enjoying the new year, our host has challenged us Daring Bakers to make something gluten free. I think this will absolutely broaden my horizon and I am game!! Talking about game; the Winter Olympics will hit Vancouver in a fortnight and to welcome everyone to Canada: Lauren chose gluten free Graham Wafers and Nanaimo Bars as the challenge for the month. The sources she based her recipe on are www.nanaimo.ca and "101 Cookbooks".

Because using regular flour is out, I am obliged to visit the local Asian shop to obtain rice flour, tapioca starch and sorghum flour. The first two can be picked out of the shelves easily, but the latter is nowhere to be found. Luckily I spot a bag of millet and I decide to grind it myself. I will just be needing 1/4 cup, so that is doable.
I really (!) like these cookies. They are waferthin, very crunchy and tasty; transforming in your mouth from almost wholewheat to sugary rice (if you know what I mean). They are crumbled to make the bars.

The result is a somewhat fatty Canadian 'Bounty'. It's good, but the ressemblance to bird seed balls is hard to shake and so I take it to work. Around noon the whole thing is devoured, which is really saying something! Colleagues kept asking me for the recipe that day.... well, consider it done!
Bird seed balls! Very funny, and I could see how that would make them less appealing to you. The graham crackers were my favourite part too, even though I was lazy and cheap and made the wheat flour version. The Nanaimo bars look good upside-down too!
