De uitdaging van deze meimaand was er nogal één! En bleek zowel in het máken als tijdens dit posten, een race tegen de klok. Fran, Lis, Shea en Ivonne (die laatste beschreef tevens het uitgebreide recept) waren de creatieve bedenkers van de uitdaging: een Opéra Cake. Maar anders dan de traditionele amandelcake met koffiesiroop en bittere chocolade mousse; zou het een lichte (zowel in smaak als kleur) variant moeten worden, opgedragen aan A taste of yellow, in het kader van de LiveSTRONG stichting door Lance Armstrong (ben je nog mee?) Helaas dus weer een taart en wéér met botercrème (niet mijn favoriete spul), maar met een enorme keuzevrijheid in smaak en kleur.

En ik had óók nog een prima gelegenheid: de samenkomst van mijn opleidingsgroepje (11p) voor een barbeque. Ik hoefde alleen maar om 18.00u in Lebbeke te zijn (waar?) en na een relaxte uitslaapochtend kon ik, na ontwaken van mijn vriend, lawaai gaan maken in de keuken (we zeggen een uur of half elf).
I my mind, mine was going to be a 'chartreuse' green pistacchio joconde flavoured with almond syrup and complemented with lemony yellow butter cream. Skipping the ganache off course wàsn't an option and for my glaze I pictured a beautiful light lavender purple shiny topping. Maybe a hint of food colouring here and there for some additional dramatic effect... And I had júst the occasion. The gathering of my fellow trainees (11p) for some presummer BBQing where me and my cake were expected at 6pm. So after my love finally arose from the bed I was all set to begin making noise ánd clutter in the kitchen.

Nou hebben wij (lees: ik) een behoorlijk aantal mengkommen en -schalen in huis, maar ik heb ze allemaal bevuild tijdens dit bakproces. Voor amandelsiroop. Voor slagroomganache met witte chocolade (om letterlijk je vingers bij af te likken). Voor 'lavendel'glazuur. En voor de botercrème.
The dough for the joconde turned out pretty green which would later result in some "is that a... spinach?!... cake?" remarks. And in retrospect I should have known that the baked layers would be somewhat sticky, so trying to cool them on the rack of the kitchen radiator was nót a good idea (am still trying to clean it as it hardened). But I was not going to be bothered with such trivial issues. I was a 'Dáring Báker' and so I made joconde, syrup, buttercream, ganache and finally glaze. For which I needed every bowl in the house.
Although I am really having a difficult time trying to grasp the concept that is butter cream. Making it always gives me a sudden rush of panic for it never seems to come together, until suddenly (much later than you would expect it to) it does... I used a bit of lemon juice for the butter cream syrup, too, and flavoured the finished product with lemon zest ánd more lemon juice. Véry yummy! The white chocolate ganache was finger licking good and my 'lovely' lavender glaze came right out of a bottle that said 'violet' (which such have been 'fuchsia'):
Mag ik trouwens nogmaals herhalen dat ik het concept van botercrème gewoon niet vat! Dit was weliswaar een beter geslaagde versie dan die van maart, maar de paniek was er weer. Want het door elkaar mixen van de genoemde ingrediënten leidt lange tijd enkel tot een geschifte aanblik.

But even more disturbing than this bright pink color was the unexpected telephone call at 15am: if I wasn't coming?! Say again? I had just put the ganache in the fridge for it was a bit runny and had allowed myself a little break. Turned out the BBQ didn't start at six... In between showering, layering cake (who said anything about working neatly when you're an hour and a half late - and counting), dressing myself up and cutting cake there just wasn't time to shoot pictures, but just let me say that the first impression is a pink one.
