DB: Cheesecake pops

April is voorbij gevlógen en nu het de 27e is geworden, mag ik mijn creatie van deze maand posten. En dan heb ik het natuurlijk over de Daring Bakers, de groep ijverige thuisbakkers die inmiddels bestaat uit bijna 1.000 (!) leden wereldwijd. En dat is ook het leukste; dat -op globale schaal- zoveel mensen zich allemaal toeleggen op hetzelfde recept. Met steeds héél verschillende resultaten...

April has flown by and since it is now already the 27th, I am allowed to post this month's creation. I am talking of course about the Daring Bakers; an active group of diligent home bakers that currently is coming up to almost a 1000 members (!), world wide. And thát is also the BEST part; so many people who -globally- apply themselves to the same monthly recipe. With véry different results every time...

Deze maand was het de bedoeling van Deborah en Elle om cheese- cake lolly's te maken, met een coating van chocolade. Oké (zei zij met gepaste scepsis): roomkaas- taartlolly's?! Meteen maar mee beginnen dan, want de restjes Philadelphia en Monchou die ik nog in de koelkast heb liggen, zijn uiterlijk houdbaar tot 4 april en het is natuurlijk té toevallig dat ik die ingrediënten maar in de koeling heb liggen terwijl het de hoofd- bestanddelen zijn van de nieuwe 'missie'.
Ik heb in totaal 300g roomkaas en moet daarvoor het originele recept door vier delen. Da's niet erg, want ik wíl helemaal geen 40 (!) room- kaastaartlolly's maken van 1,2kg roomkaas; het idee van een stuk of tien stukjes taart op een stokje met gesmolten chocolade bedekken en met taartdecoratie versieren, bevalt mij veel beter (lui? of gewoon praktisch?)

This month we're making 'cheesecake pops' (come again?!) and I'd better start right away, before the leftover cream cheese in the fridge spoils. There is 300 grams in total and this means splitting the original recipe in four. Which suits me just fine for I clearly don't have the stamina to create 40 (!) pops out of 1,2kg of cream cheese. I like the idea of making about ten pieces a whole lot more (lazy? of merely practical?)

Recept
Meng in een grote schaal 300g roomkaas met 100g fijne kristalsuiker, 15g bloem en een snufje zout tot een gladde massa. Mix op lage snelheid en voeg één voor één 2 eieren en 1 eierdooier toe tot alles goed vermengd is. Roer ½tl vanille-essence en 60ml slagroom door het beslag (en evt. nog ½tl bakpoeder). Doe het beslag over in een ingevette taartvorm en plaats deze in een grotere ovenschaal waarin een bodem gekookt water (tot ongeveer halverwege de taartvorm). Bak de kaastaart 35 tot 45 minuten in een voorverwarmde oven van 165°C tot de bovenkant goudbruin is en de taart stevig aanvoelt. Laat de taart in de vorm afkoelen, nadat ze uit het waterbad is verwijderd. Wikkel het geheel in plasticfolie en laat minstens 3 uur (maar liever nog een hele nacht) in de koelkast rusten tot het gebak door en door koud is.

Uit de kaastaart worden vormpjes gesneden of bolletjes geschept, ter grootte van een walnoot (ik opteer voor kubusjes). Deze worden zo goed mogelijk zo compleet mogelijk met gesmolten chocolade bedekt (kliederwerkje) en naar eigen inzicht versierd. Ik gebruik drie soorten chocolade en drie kleuren zilverparels. En dan natuurlijk nog op een stokje steken; anders zijn het geen lolly's...

Het zal aan míj liggen, maar ik ben niet wég van dit recept. De hele taart smaakt naar gebakken roomkaas: best lekker, daar niet van, maar gewéldig: nee. En ik vind ook niet dat de combinatie met chocolade daar iets aan toevoegt (hoewel, gezien de enthousiaste reacties van andere DB'ers, ik waarschijnlijk alleen sta in deze mening). Ik moet héél eerlijk zeggen dat ik van een DB recept toch net iets meer verwacht. Maar misschien ligt de uitdaging deze maand wel in het knutselproces van het decoreren. En het is bovendien uitdagend om plaatjes te schieten (B: trekken) van de fotogenieke lolly's:

I know it's not custom to speak negatively about a DB recipe and though I'm sure this month's hosts put a lot of effort into the whole thing, I múst say that my initial enthusiasm has diminished a bit with these odd lollypops. The cheesecake tasted almost like simply baked cream cheese to me and I didn't think covering it with melted chocolate lifted the taste to a higher level. So although it was okay, it wasn't gréat either (and I guess I'm spoiled in that way; I did expect a little more of a DB recipe). However: the whole process was still great fun in an 'arts&crafts' sort of way. And the bést part was taking the pictures, for the pops are véry photogenic!

  3. I'm still waiting a still moment to cover my heart-shaped lollipops.
    I had the same feeling on the past challenge too greasy and too "plastic" I post my remarks and simply anyone posted a comment on it.
    all saying wonderful or cute, anyone discussed my remarks, only a few.
    In this challenge I'm not with you just because I like this kind of cheese cake.
    LIving in Italy I prefer ricotta cheese to cottage chesse but that's all.
    I'm waiting to take some shots of these stay tuned!

  11. Mixed feelings here as well, I think this is another "acquired taste", maybe it's time for some European influences!
    Dit recept gaf me een echt Theo en Thea gevoel, knutselen met kaas. Maar je hebt gelijk, het resultaat ziet er prachtig uit en fotografeert prima, je zou ze alleen niet op hoeven eten haha!

  17. You did a lovely job on your pops. I really like the dragees...very festive.

    I can't imagine how difficult it must be to select the DB challenge for the month. Since we are a global group and each country has different foods readily available...it has to be a tough thing to do. The great thing is that each of us rises to the challenge to make the recipe. For some it will be easy or others it will be incredibly difficult. You never know what you will learn along the way...one gal from India learned to make cheese so she could make these pops.

    No matter what the recipe, the fun and the fellowship with other DBers is worth more than what each dish turns out to taste like.

    I'm so glad you had a great time taking pictures. You did a great job.
