I would like for the dishes that I make to have a certain 'wow' factor. Like 'wow, I didn't know I could màke that'; 'wow, thát is unusual' or 'leaving your guests all impressed wow'. This mozzarellasoup has all of the three above (I think so at least) and is furthermore quick and easy to make. And cheap.
Chop one onion and stir-fry over medium heat in some olive oil. When the onion is tender, add about a handful of fresh basil en cook for one minute. Deglaze with 3dl well flavoured vegetable stock en let simmer for 5 minutes. Sift, thus removing onion and basil from the broth. Puree one ball of mozzarella wíth its moist and warm this with the broth over a medium heat. Add a dash of light cooking cream and flavour with salt and peper to taste. Divide 100g of (red, yellow) cherry tomatoes over three soup bowls and pour the soup into the bowls. Garnish with fresh basil and serve. It's smooth, creamy, tasteful, light and good!
